At Dream Cuisine we are passionate about making the best patisserie possible. We use organic ingredients (milk, flour, most fruit and Daintree organic vanilla) with classic French methods and Australian creativity to produce our sweet delights. We also produce popular items such as rich chocolate brownies made with Australian pecans and Cacao Barry French chocolate.

Currently we have a regular product lineup that includes macarons in the French style, luscious lime tarts and vanilla brulees,eclairs,assorted fruit tarts, pecan pies with maple syrup, Florentines, biscotti and cinnamon stars, croissants, Danish pastries, snails,chocolate croissants, brownies and doughnuts with either salted caramel, chocolate ganache or vanilla filling.
Macarons are a delicate biscuit made with ground Australian almonds and Italian meringue, sandwiched together with creamy chocolate ganache or butter cream flavoured with real fruit. We have also created our own macaron recipes using other Australian nuts, such as hazelnuts, pistachio and walnuts. Our pistachio and lime macaron won a silver medal in the 2012 Sydney Fine Food and Wine Awards. Macaron flavours include:pistachio and lime; raspberry; hazelnut and chocolate; passion-fruit; cherry and chocolate; walnut and whisky (using single malt – our “”blokes macaron””), and the all-time favourite, salted caramel, using fleur du sel.
Who are we?
Owen Saddler, a former final year engineering student, and Marilyn Chalkley, a former journalist and communications professional, are a mother and son team who started operating in February 2010. We cook out of our commercial kitchen in Fyshwick, Canberra, and have a number of wholesale, retail and corporate clients.
