Always in season – Eggs

Eggs can be the real heroes of the kitchen.

Eggs are a great staple ingredient and offer us so many options, both on their own and when incorporated into other dishes. In baking, eggs play an important role in everything from cakes and cookies to meringues and sauces. They are also great in savoury dishes such as quiches and frittatas or enjoyed as a standout on their own. Eggs are also packed with protein, essential nutrients like vitamins D and B12, and minerals like selenium, so they really are the whole package. They’re also a very cost-effective ingredient to put a nutrient dense meal on the table.

Earlier this year, there was an outbreak of avian flu across some egg farms in NSW and Victoria. This resulted in an egg shortage in supermarkets across the country and enforced a temporary purchasing limit on eggs.

At the Market, our egg producers have been working closely with bio-security to ensure they’re following procedures to reduce the risk of spread and keeping their chickens healthy and happy.

Our stallholder Greg from Farmer Brown’s Free Range Eggs was recently a part of an ABC News story that discussed the impact of this outbreak and what Australia is doing to help eradicate bird flu. Greg reflected on how this impacted his farm as well as the protocols he had to put in place to help manage and test his hens. Luckily, his results came back negative for the virus which was a big relief.

It has been a tough period for some of our egg farmers such as Greg, so be sure to show them some egg-stra love and support at the Market.
