What’s all the kerfuffle about the truffle?
Well, anyone who has used this fungus knows exactly what all the fuss is about. This highly prized black fungus is held in high esteem in gourmet culinary culture, pairing well with cheese, eggs, pasta and meat, with a flavour described as musky and earthy. People just love them. And now is the time of year we all get a very brief glimpse into the world of truffles – and how lucky are we that our region is just perfect for truffle growing?!
With a very short growing season, truffles are available at the markets from 11 July, sourced from several growers from the Canberra Region including Turalla Truffles and La Truffiere, both located near Bungendore, as well as Terra Preta Truffles from just outside of Braidwood. All three growers specialise in the French Black Truffle, Tuber Melanosporum, otherwise known as the Périgord Truffle, named after the Périgord region in France.
At the Market you can also experience truffle inspired meals from Fine Terrines and Pates partnering with Turalla Truffles to create unique dishes each week. So far, we have had saffron poached pear and black truffle cream crepes, and truffle rabbit Armagnac terrine. The word on the street is that this week may bring some delicious truffle chicken pate. Delish!
