French Toast with Apricots and Bacon


4 rashers bacon

3 apricots

2 tbsp maple syrup

2 slices bread

2 eggs

300ml milk

25g butter

¼ tsp vanilla extract

Pinch salt

Pinch ground cinnamon


In a large bowl whisk together the eggs, milk, salt, vanilla and cinnamon.

Transfer the egg mixture to a large, shallow, glass or ceramic dish.
Dip both sides of each slice of bread into the egg mixture.
Melt 1 tbsp butter in a large non-stick frying pan, over medium to medium-high heat.

Fry bread until golden.

Halve the apricots, and remove stones. Cut into segments.

Heat maple syrup in pan and add apricots. Toss together gently and set aside.

While toast is cooking, grill bacon rashers.

Serve toast with bacon, apricots, and maple syrup juices.
