    • Indigo Valley Lamb is a Paddock to Plate Lamb business owned and operated with a lot of love and passion by Paul and Suse Heard. Indigo Valley Lamb is located in the luscious and picturesque Indigo Valley in North East Victoria.

      Paul and Suse breed and raise South African Meat Merinos (SAMM) and sell their delicious Paddock to Plate Indigo Valley Lamb direct to consumers and restaurants locally and via Farmers Markets located in Albury, Eltham and Canberra.

      We are passionate about breeding their SAMM Lambs, a breed renowned for their superior meat quality. We chose to breed SAMM lambs due to their tendency to fatten more slowly, unlike commercially bred lambs which are designed to fatten rapidly ready for a quick sale. The slow rate at which SAMM lambs mature allows the meat to develop fine grained, intramuscular fat that provides more flavoursome, tender and delicious tasting lamb.

      In addition to superior breeding our Lambs are handled quietly and with care which makes a big difference to the quality and taste of the Lamb. Paul and Suse firmly believe low stress handling is a major contributor to overall health and happiness of their Lambs allowing them to relax and channel all of their energy into growing and fattening slowly and evenly which results in tender, juicy tasty lamb!!

      Paul and Suse engage their local butcher, CC Quality Meats in Beechworth, to prepare their Lamb. This locally based, highly efficient process ensures the lamb is delivered super fresh, making it even more tasty and delicious!
