A recipe for summer

If there has ever been a time for people to get together and enjoy each other’s company over a BBQ or picnic it’s now! 

And with fresh regional summer produce available from this weekend at the Market, creating an easy summer feast couldn’t be easier.  

Why not try this summer fresh peach salad with ingredients from our farmers: 

Ingredients 

Toss the chicken in ½ tbsp of the olive oil and season with salt and pepper. Cook on a hot BBQ grill for 3-4 mins on each side or cook through then set aside to rest.  

Toss the peach quarters with another ½ tbsp olive oil and ground black pepper. Grill the quarters, flat side down on the hot BBQ grill for 1-2 mins on each side. 

Mix the remaining olive oil with the vinegar, honey and chilli, toss through the salad leave and arrange in serving bowl or plate. Top with the chicken and peach slices and crumble the feta over the top. Voilà!
