One of our regular stallholders, Mark Dureau, has just had his wild rabbits picked up by famed UK chef, Jamie Oliver. Jamie’s Italian will open its doors in Canberra city later this year, and Mark’s wild game rabbits will end up on the restaurant’s menu. Mark shoots the rabbits which are then bought by a processor who is on-selling the fresh boned rabbit meat to Jaime’s Italian. And of course, if you can’t wait for the restaurant to open, you can visit Mark who will be returning to the Market in the near future with his fresh rabbit to add to your own menu.
